OUR STORY

With nearly a decade of experience in astronomy outreach and education, including time at Sydney Observatory, I’ve spent countless evenings sharing the wonders of the cosmos. My background includes research on dark matter detection, three-body systems, and even combustion noise in rocket engines.

Along the way, I discovered another passion: the art of mixology. I’m drawn to the same qualities I love in science — precision, creativity, and a deep respect for craft. The Old Fashioned is a personal favourite: spirit-forward and balanced.

Galileo’s Glass is where these two worlds collide, a guided journey through the night sky, paired with carefully crafted drinks. It’s an experience designed to spark curiosity, invite conversation, and leave you with a renewed sense of wonder, both for the universe above and the cocktail in hand.

OUR PHILOSOPHY

At Galileo’s Glass, we believe in quality: of thought, of craft, and of experience.

Our evenings are built on two pillars.

First, the stars.
We offer more than facts about the cosmos; we tell the story of how we came to know what we know. From ancient Greece to modern science, you’ll trace the arc of human discovery and imagination in a way that’s engaging, thoughtful, and easy to connect with.

Second, the glass.
We serve classic, spirit-forward cocktails that are deliberately simple and carefully executed. No gimmicks, no overloaded mixers. Just top-shelf spirits, balanced proportions, and fresh ingredients. Most bars drown the quality in excess. We showcase it.

This is an experience for the curious. For those who value good company, good conversation, and a well-made drink under the stars.
